Uit de geheel open keuken komen voor lunch en diner seizoensgebonden Frans- en Italiaans georiënteerde gerechten die bereid zijn op basis van eerlijke ingrediënten.

Open werkt uitsluitend met producten van integere leveranciers: L’empereur Boucherie, de Lindenhof, Bocca (koffie) en Bavaria (het van zuiver bronwater gebrouwen en ongepasteuriseerde Swinckels bier) zijn slechts een paar voorbeelden.
