Uit de geheel open keuken komen voor lunch en diner seizoensgebonden Frans- en Italiaans georiënteerde gerechten die bereid zijn op basis van eerlijke ingrediënten. De pasta is vers, het vlees heeft gescharreld en de vis is vis die mag. Het ijs is huisgemaakt en ook de madeleines bij de biologische koffie komen uit eigen keuken.
Open is ‘een gedroomde zaak met koks die rustig eenvoudige, maar spannende en vrijwel perfecte gerechten maken. Liefhebbers die weten dat eenvoud kenmerk van het ware is’***.
Open werkt uitsluitend met producten van integere leveranciers: L’empereur Boucherie, de Lindenhof, Bocca (koffie) en Bavaria (het van zuiver bronwater gebrouwen en ongepasteuriseerde Swinckels bier) zijn slechts een paar voorbeelden.

Greetje is a cosy restaurant in one of the most beautiful neighbourhoods of old Amsterdam. It is situated in a monumental building on the Peperstraat 23 with a breathtaking view overlooking the Montelbaans tower. Greetje stands for a great night out with excellent food. Forgotten Dutch specialties and French classics are being brought back to the table here.
In December of 2005 Greetje was reviewed by the most respected food critic in the city, Mr. Johannes van Dam. He rated the restaurant with a 9- on a scale of 0 to 10. Self-made chef Wil Demandt works his magic in this exquisite Jordaan restaurant, with a menu loosely based on traditional peasant dishes. The result is a delicate and subtle cuisine with an occasional rough edge - which might be just enough to scare Michelin away. The restaurant itself is quite large and roomy, and well lit, but retains an intimate atmosphere nonetheless. Amiable service, and a large selection of wines including some interesting unconventional bottles.
